Chef ANDRÉ LASALLE

Winner of numerous coveted culinary awards, Chef André Lasalle is inspired by the local Cajun and Creole cultural influences. The SAINT LAWRENCE’s menu is a combination of Chef André Lasales’ own rich Cajun family heritage combined with a formal Training in the art of french haute cuisine. The resulting menu directly embodies his signature style, which is a refined Cajun French Fusion. Sourcing only the freshest ingredients directly from local organic farms and suppliers of meat, poultry and fish Chef André Lasalle has elevated traditional rustic food into a visual feast as well as a gastronomic one and he leans heavily on our French influence by offering a daily menu of three-course lunch and dinner options as well as a superb Saturday and Sunday brunch.

Cajun FRENCH FUSION

Cajuns are fun-loving French-Acadians from Nova Scotia who settled in the south in the 18th century. Known for their pleasure-lovin’ nature and joy of living, Cajuns enjoy excitement in life, and food is no exception. When they settled in the south, they created their own rustic style of eating known as Cajun. They adapted their native French rustic cuisine to local ingredients including rice, sugar cane and the bounty provided by the sea. Adding some zest and excitement to basic ol’ seafood became the Cajun trademark. We believe that food is a treat for all the senses and here at The Saint Lawrence we have elevated traditional rustic food into a visual feast as well as a gastronomic one.

Almond MACAROONS

In 1533, when the Macaroon was first introduced to King Henry II of France by his wife, Catherine de Medici, it is no wonder that that the macaroon instantly became a royal treat suitable for a king. Soon after, the macaroon was all the rage of New France. This simple macaroon recipe has been handed down through gererations of New Orleans’ Cajun families and The Saint Lawrence’s Chef André Lasalle would like to share his inspiring family recipe so that you may also enjoy this sensational royal treat with your family.
